
These small, scrumptious apple pancakes will surely win over your heart just as they did for us! These pancakes are just the right amount of sweetness and pairs best with our 100% pure Maine maple syrup.
Ingredients
- 1 cup milk kefir
- 1/4 cup water
- 1 egg
- 2 cups whole wheat flour
- 2 tablespoons cane sugar
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 3 apples (peeled, cored, and diced)
- 5-6 tablespoons of coconut oil
Instructions
- In a small pot, combine the milk kefir and water and heat over low heat.
- In a large mixing bowl, combine the egg, salt, and sugar.
- Once the milk kefir and water mixture is slightly warmed, add it to the mixing bowl with the egg, salt, and sugar.
- Gradually add in the flour while mixing the batter until it is smooth. The batter should resemble a dense sour cream. If the batter is still too thin, try adding a few more tablespoons of flour until the proper consistency is achieved.
- Add in the baking soda and mix the batter until the baking soda is evenly distributed.
- Add in the diced apples and mix the batter until the apples are evenly distributed.
- Next, melt 2 tablepoons of coconut oil in a skillet or pan over medium heat. Drop the batter into the hot pan by the tablespoon and fry for 2-3 minutes on the first side or until golden brown.
- Flip the pancakes over and fry for an additional minute or 2.
- Transfer the pancakes to a plate and cover with a tea towel to keep warm until there is no batter remaining and the pancakes are ready to be served.
- Add more coconut oil between batches if needed to prevent sticking.
- Serve with maple syrup, jam, or honey and enjoy!
