
These flaky, flavorful biscuits are typically found on our breakfast table! They pair nicely with eggs on the side, or they make a wonderful breakfast sandwich.
Ingredients
- 2 1/2 cups whole wheat flour
- 2 tablespoons baking powder
- Pinch of sea salt
- 1/2 cup cold, cubed butter (salted or unsalted)
- 1/2 cup whole milk
- 1/2 cup milk kefir
- 1 cup shredded cheddar cheese
- 1 tablespoon dried thyme
- 1 1/2 tablespoons coconut oil
Instructions
- Place a large cast iron skillet in the oven and pre-heat to 450 degrees Fahrenheit.
- In a large mixing bowl, add the cold butter, flour, baking powder, and salt. Rub the flour mixture and the butter between your hands until it is well combined and resembles wet sand.
- Add the milk and the milk kefir to the bowl and mix until everything is just combined, you do not want to over-mix.
- Gently stir in the cheddar and thyme until combined evenly throughout the mixture.
- Remove the dough and place on a well-floured surface.
- Pat the dough down to about 1/2 inch thickness. Fold the dough into 3 even parts (fold the left side towards the middle, fold the right side towards the middle and cover the folded left side).
- Repeat step 6 twice.
- Pat the dough to 1/2 inch thickness a final time.
- Use a medium-sized round biscuit cutter, cookie cutter, or a glass turned upside down to cut the biscuits. This recipes yeilds approximately 7-8 biscuits depending on the size of the cutter used.
- Remove the skillet from the pre-heated oven and grease the pan with the coconut oil. Carefully add the biscuits to the skillet and return the skillet to the oven.
- Bake the biscuits for 15 minutes or until golden brown. Remove the biscuits from the skillet and place on a cooling rack to prevent the bottoms from overcooking as the biscuits cool. Enjoy!
