Country Fried Venison with Gravy

This mouth-watering and incredibly tender recipe is great for those that enjoy comfort food. Pair this Country Fried Venison Steak and Gravy with any sides of your choice to please your family or guests.

Ingredients

Steak:

  • 4 venison steaks
  • 1 cup whole milk
  • 2 eggs
  • 2 1/4 cups whole wheat flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon chili powder
  • extra virgin olive oil (for frying)

Gravy:

  • 2 cups whole milk
  • 1/3 cup pan drippings
  • 1/3 cup flour mixture from steak seasoning
  • Sea salt and pepper to taste

Instructions

Country fried steak:

  1. In a large bowl, mix the milk and eggs.
  2. In a separate large bowl, mix all of the dry ingredients together. Reserve 1/3 cup of this mixture and set aside for the gravy.
  3. Tenderize each steak using the pointed end of a meat mallet. Then pound each steak using the flat end of a meat mallet until they are thin, about 1/2 inch thick.
  4. Dip each steak into the milk and egg mixture, then coat generously with the flour mixture. Let the coated steaks rest for 5 minutes at room temperature.
  5. Fill a large pan or skillet with about 1/2 inch of oil. Heat the oil over medium-high heat until hot. Fry the steaks for 5-7 minutes on the first side or until golden brown. Flip the steaks over and fry for an additional 5 minutes or until golden brown.

Gravy:

  1. Drain the cooking oil from the pan, leaving 1/3 cup of oil in the pan.
  2. Add the reserved 1/3 cup of the flour mixture to the pan and whisk until smooth.
  3. Turn the heat to medium and stir in the milk, whisking constantly.
  4. Bring the gravy to a boil and cook for 2 minutes or until thick. Flavor with salt and pepper to your liking.
  5. Serve the gravy over the fried steak and with whatever side dishes you have prepared. Enjoy!
